Cauliflower Cheese is great. It is comfort food at its best, especially when served over a slow baked jacket potato on a cold autumn night. However, if you add up the nutritional data it doesn’t really have the protein to count as a ‘proper’ dinner. If you are trying to improve muscle tone, keep your energy levels up or even trying to maintain good skin that is a real drawback.
So why not max-out the protein level of this simple veggie classic by adding a couple of spoons of pea-protein powder to the cheese sauce? Now, pea protein powder is one of those vegan protein powders that can, if we’re honest, be a bit ‘meh!’ in a shake or smoothie. However, it comes into its own when added to savoury dishes. Each scoop of pea protein powder is approximately 72% protein. That makes it a fantastic ingredient for boosting the protein content of everyday meals. In this cauliflower cheese recipe you won’t even know it is there – it is both comforting and tasty, just as every great cauliflower cheese should be.
I x Cauliflower, chopped into florets
4 tbs Pea protein powder
175ml Milk (coconut or cow’s)
6 tbs Chedder cheese, grated
1/2 tbs garlic paste
salt to taste
sprinkle of cayenne pepper
1. Steam the cauliflower until just tender.
2. In a saucepan, combine the milk, protein powder, 4 tbsp of the cheese, garlic, and seasoning. Whisk over medium heat until you get a thick and creamy sauce.
3. Add your cooked cauliflower to a small casserole dish, and cover with the protein cheese sauce.
4. Add remaining 2 tbsp grated cheese and the cayenne pepper on top and place grill for about 10 minutes, or until the cheese on top has melted.
