Sometimes it is simply too hot to eat a proper breakfast, even if you know that you should do. In such circumstances there is nothing nicer than a cold, thick creamy smoothie…especially if it has the instant energy boosting goodness of coconut oil and cocoa. Yum!

One thing to note when blending your coconut smoothie is that the order that you add the ingredients makes a difference. Coconut is solid at cool temperatures. If you add the coconut oil to your ice, you may well end up with a lumpy smoothie! To avoid this blend your room temperature ingredients with the coconut oil first, then add the powders and finally blend in the ice. This will ensure a smooth, creamy smoothie.
Coconut Oil Smoothie (with added protein)
- 10-12 ice cubes
- 250ml of water
- 1-2 tablespoons protein powder (whey or alternatively hemp protein powder for vegans)
- 1 tablespoon Virgin coconut oil
- 1 tablespoon flax or chia seeds ground
- 1 teaspoon high quality cocoa powder
- 3-4 tablespoons coconut flour (more if you want it thicker)
Place all ingredients in a blender and process at high speed until well combined. For an alternative try substituting the cocoa powder for vanilla extract
